A century ago, a trip to the meat market was a far more interesting endeavor than it is today. Sure, beef, chicken, lamb and pork were there, but so too were wild ducks, pheasant, prairie chickens, venison in all its forms—even black bear, mountain goat and muskrat, sold euphemistically as “marsh hare.”
