Dear Jon: What Do I Do With a Wine Cellar I Inherited…But Know Nothing About?

Ask Jon: I bought a restaurant with a wine cellar. All inventory included. There’s some really nice old stuff, but I can’t vouch for its provenance or conditions over the years. The random affordable bottles I opened are fine. How do I offer old baller bottles without eating the cost if some of the wines are not up to par?
