A few months ago, Mark Schettler, a New Orleans bartender I admire, posed this question/conundrum on an industry Facebook group: “What’re yall’s favorite orange juice-heavy cocktails, ideally classics? ... Owing to our Old Fashioned volume we’re still ending up with more scarred oranges and orange juice than we know what to do with.”
