Peter is president and CEO of Fischbach Enterprises LLC, where he does new product development and consulting for a range of restaurants and onsite foodservice operations. During his 32-year career, Chef Fischbach has served as executive chef for several independent restaurants and catering companies. He was formally trained at the Academy of Culinary Arts in New Jersey and has had recipes published in Gourmet, as well as several other books and magazines. Peter is a member of the American Culinary Federation where he has received his Certified Executive Chef. He is also a member of Slow Food and the Chaine de Rotisseurs.
