How does your iconic French fries and frosty dish come together? Why do you think the combo of salty and sweet is so appealing? 

We start with a milkshake glass filled with very crunchy, thrice-fried French fries. Then we pour over a hot potato-leek soup. We take vanilla ice cream and reverse-poach it in liquid nitrogen and then pour that over the top. It becomes a show-stopper when the guest dips their spoon into the milkshake...
