Rick Mace Connects with Florida’s Food History Through Barbecue

Rick Mace didn’t expect to fall for Florida, but during the seven years he served as executive chef of Café Boulud in Palm Beach, he became enamored with the state’s food, especially the tropical produce, seafood, farming and chef communities, immigrant cultures, and history. “It’s one of the first places Europeans set foot in the New World; Florida’s food story is 500 years of fusion,” he says.
