Bhavin Chhatwani wasn’t supposed to open an independent restaurant, let alone one in Raleigh, N.C. At least, that wasn’t the plan. Chhatwani hails from the state of Rajasthan in northwest India and graduated from one of the country’s premier culinary schools, the Institute of Hotel Management, Aurangabad.
