New Zealand rack of lamb, cut into individual chops

Olive oil

Rosemary sprigs, chopped

Thyme sprigs, chopped

Parsley sprigs, chopped

Garlic cloves, chopped

Mint jelly with leaves

tbs
Whole-grain mustard

Cumin salt

Marinate lamb chops in olive oil, rosemary, thyme, parsley and garlic.

Preheat grill to 400 degrees F. Meanwhile, in a small bowl, mix mint jelly and mustard and set aside.

Season lamb chops with cumin salt and grill until medium-rare, or 5 minutes per side. Let rest for 10 minutes, then serve on a plate with a side of mustard-mint sauce.
