Chefs find inspiration everywhere; for Jason Vincent, it was at Arzak in San Sebastian, Spain. Fresh out of culinary school, the young cook managed to nab a coveted apprenticeship at the Basque stalwart. He spent the next two months un-learning every lesson he’d learned in school, and crafting as many as 80 "Flower of the Egg" dishes a night—à la minute.
