As chefs and consumers become more aware of the importance of cooking and eating sustainable seafood, they’re rethinking their consumption of it while turning to aquaculture. While experts and industry leaders contend with the potential negative effects of aquaculture’s boom—damaging marine habitats and polluting waterways, to name just two—there is one unlikely product that can help meet the demands of a hungry populace with minimal (or even positive) environmental impacts: oysters.
