When Marissa Gencarelli moved to Kansas City, she couldn’t find the tortillas of her youth. Everything was mass-produced and preservative-filled. And her memories—waiting in line at the mill for their masa to get weighed, the smell of corn filling her nostrils, the owner rolling up a tortilla, fresh off the griddle for her to gobble up—drove Gencarelli and her husband Mark to open Yoli Tortilleria in 2017.
