Pheasants Take Flight on Menus

Found throughout the world, pheasants are one of the oldest game birds, yet they don’t get a whole lot of love because of the perception that they’re tough to cook (and eat). It’s true that these birds have more muscle and less fat than traditional poultry, but with a little TLC they can soar above chicken, duck and other feathered friends any day. Here are two takes:
